Veggie & Egg Breakfast Casserole
Preheat the oven to 375 degrees. Grease one 9x13” baking pan with nonstick cooking spray (We used avocado oil)
Chop your veggies. Whisk 10 eggs together in a large bowl.
Heat avocado oil over medium for about 2 minutes. Add the mushrooms and sauté them for about 4 minutes or until they brown. Add minced garlic. Add the remaining vegetables and cook for 2 minutes.
Pour the cooked mixture of veggies into the greased pan
Pour the eggs over the veggies. Add turmeric and thyme to the top of the casserole.
Bake the casserole, uncovered, on the middle rack for 45 minutes. Allow the casserole to cool for 10 minutes before eating. Enjoy for the entire week!
