Nothing says summer like simple, fresh ingredients. This Veggie Basil Summer Pasta is perfect.

- 1 lb. linguine pasta
- 1 cup pasta water
- 2 Tbsp. olive oil
- 3 small zucchini
- 4 tomatoes, diced
- 1 lemon, juice and zest
- 1 cup Parmesan cheese
- about 10 basil leaves, chiffonaded
- 1+1/2 tsp. sea salt

- Cook the pasta according to the package directions.
- Reserve 1 cup of the pasta water and drain. Toss the pasta with 1 tablespoon of the olive oil.
- Chop the veggies and add the zucchini to the pan that the pasta cooked in with the remaining olive oil over medium heat.
- Saute for about 4 minutes and add the tomatoes, pasta, lemon juice, pasta water, salt, and parmesan. Toss everything well and remove from the heat.
- Sprinkle with basil and additional cheese if desired. Serve!
