Turkey Hummus Roll Ups

Instructions
  1. Lay out your tortilla on a flat surface and spread with 1/4 c. hummus, leaving 1/2 inch of tortilla on the edge without hummus.
  2. Assemble your tortillas by layering 1/2 c. spinach, 2 slices of turkey, 2 half-slices of cheese, cucumber, and red pepper slices. Fold in the edges of the tortilla and roll it up. Repeat for the remaining tortillas.
  3. Cut the tortillas in half or quarters and store in the refrigerator for up to two days until you’re ready to serve.
