Instructions
  1. Cook the sweet potatoes in the oven or microwave prior to making this dish.
  2. Add the cooked sweet potatoes, pumpkin, 1 + 1/2 tablespoons of ghee or butter and milk in a bowl and mix or whip well. Set adise.
  3. Diced the onion, carrots and celery and add them to a large sauce pan or dutch oven with the remaining tablespoon of ghee. Cook them for 4-5 minutes, or until they soften. Add the garlic and beef and allow the meat to brown.
  4. Add the wine and allow the mixture to cook down for anoher 3 minutes before adding the tomato paste. Let the mixture cook for 2-3 final minutes before removing from the heat.
  5. If you're using a dutch oven, simply spoon the sweet potato and pumpkin mixture over the meat, or pour the meat and veggies into a casserole dish and cover with the sweet potato and pumpkin.
  6. Place in the oven, covered, for 15 minutes, remove the cover and bake for 10 additional minutes before serving.
