We think it’s safe to say Spring has finally sprung and the bright, colorful produce is starting to roll in! Strawberries and basil are popping up everywhere so we try to add them to as many meals as we can while the fresh ones last!
That’s where this Strawberry Feta Farro Salad with Pesto comes into play. All the brightness of spring flavors paired with hearty farro grains for an easy meatless dish the whole family will love!
Strawberry Feta Farro Salad with Pesto
Prepare farro according to package instructions, making sure to salt the cooking water. Once cooked, drain any excess cooking liquid.
Toss hot farro with arugula and pesto in a large bowl and refrigerate for at least 20 minutes or until chilled.
Once chilled, toss farro and arugula mixture with strawberries, grape tomatoes and feta. Drizzle lemon juice and olive oil over top to finish and season with extra salt if needed. Serve cold.
