Southwest Turkey Breakfast Hash uses up that leftover turkey you have laying around and transforms it into the perfect breakfast dish with a southwestern kick.

- 1 Tbsp. olive oil
- 4 medium Yukon gold potatoes, diced
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 jalapenos, diced
- 1/4 cup water
- 2 cups diced, cooked turkey meat
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1 tsp. salt
- 1/2 tsp. pepper
- optional - 4 fried eggs

- Dice the potatoes and add them to a large skillet with the olive oil over medium-high heat while you chop the vegetables.
- Add the vegetables and water to the skillet and cover with a lid so the potatoes have a chance to cook and steam.
- Dice the turkey.
- After about 5 minutes, remove the lid and add the turkey, spices, and seasoning. Mix well.
- Optional - top each serving with a fried egg & enjoy!
