Skillet Pork Chops with Herbed Butter

Instructions
  1. Preheat oven to 450 degrees Fahrenheit.
  2. Before starting the pork chops, prepare the herbed butter. Soften 8 tablespoons of the salted butter. Using a fork, mix in the minced garlic, chopped fresh parsley, and chopped fresh thyme. Place into the freezer until ready to use.
  3. Season both sides of each pork chop with the salt and pepper.
  4. Heat a large cast iron skillet (or any other oven-safe skillet) over medium-high heat for about 1 minute, then add 2 tablespoons of the butter to the skillet and let melt.
  5. Place the pork chops into the heated skillet and let cook for 3 minutes, then flip and cook for another 3 minutes.
  6. Place the skillet into the oven and let cook for 12-15 minutes. At the 12 minute mark, check the temperature of the pork chops by placing a meat thermometer into the thickest part of the pork chop without touching any bone. Once the internal temperature reaches 135 degrees they’re ready to come out. The temperature will continue to rise after removing from the oven to the recommended 145 degrees for pork. This will help keep your pork juicy and not dry.
  7. Top each pork chop with about a teaspoon of the herbed butter and serve immediately.
