Brussels sprouts are the most popular new vegetable, and for good reason. Not only are they delish, they’re also nutritional powerhouses. We’re making a killer aioli to go with this veggie using our favorite avocado oil. The best part – you don’t have to leave the house to order any! Snag a bottle here!
Roasted Brussels Sprouts with Avocado Oil Lemon Aioli

For the avocado oil lemon aioli
Preheat the oven to 400 degrees.
Halve the Brussels and lay them out on a baking sheet lined with parchment.
Add the avocado oil, salt, and pepper and toss well so you coat all of the Brussels.
Place them in the oven for 25-30 minutes, until they're all crispy.
While the Brussels cook, make the aioli. Add the egg, egg yolk, lemon zest, salt and garlic cloves in a blender. Reserve the lemon juice and avocado oil.
Blend together and slowly start to stream the oil in. The mixture will emulsify and thicken. Add the lemon juice and pulse until combined.
When the Brussels are finished roasting, serve them with a side of the aioli!
