Instructions
  1. Preheat the oven to 375 degrees.
  2. Cook the rice according to the package directions.
  3. While the rice cooks, dice the onions and garlic and saute them in a large skillet with the butter until the onions are translucent.
  4. Add the pumpkin, coconut milk, salt and pepper into the onions and garlic and bring the mixture to a simmer, while stirring.
  5. When the rice has cooked, pour it into the the sauce and mix everything together well.
  6. Pour the mixture into a greased baking dish, and place into the oven for 20 minutes, or until the top is golden brown.
