Pumpkin Oatmeal Chocolate Chunk Cookies

Pumpkin season is well underway and these Pumpkin Oatmeal Chocolate Chunk Cookies are our absolute favorite treat.  This fall inspired twist on the classic oatmeal chocolate chunk cookie is soft, chewy and packed with pumpkin flavor!

Instructions
  1. Preheat oven to 350*
  2. Cream together butter and both granulated and brown sugars until light and fluffy, about 3-4 minutes. Then add egg and vanilla and continue to beat until well combined, another 1-2 minutes.
  3. In a separate large bowl, whisk together the flour, oats, cinnamon, baking soda and salt until well combined.
  4. Add about one third of the flour mixture to the batter mixing until just combined. Then add about one third of the pumpkin puree and continue, alternating between the dry ingredients and the pumpkin until everything is combined. Stir in chocolate chunks.
  5. Scoop cookie dough onto a parchment lined baking sheet (about 2 tbsp of dough per cookie) making sure there is space between each cookie as they will spread. Then, using the back of a fork, press lightly to flatten the tops of each ball of dough.
  6. Bake for about 15 minutes or until cookies start to turn golden at the edges. Allow to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
