Pumpkin Butter Cream Cheese Stuffed Dates with Maple Pecans

We’re still feeling all the fall vibes. The air is crisp, the kitchen is full of spice and we’re ready for a simple treat that screams autumn! These dates are just the thing. Soft dates are stuffed with spiced pumpkin butter cream cheese and topped with candied maple pecans. Try these dates for a fun snack, a quick appetizer, or even as a light dessert!

Instructions
  1. In a small non-stick skillet, combine the pecan halves and maple syrup over medium-low heat. Stir continuously with a rubber spatula until the maple syrup has crystalized around the nuts. This will take about 5 minutes. Remove from the heat, sprinkle the kosher salt over the pecans and allow to cool.
  2. Meanwhile, stir together the pumpkin butter and cream cheese until completely combined.
  3. Roughly chop the pecans.
  4. Using a small spoon, stuff the dates with the pumpkin butter mixture.
  5. Sprinkle the top of the dates with the chopped pecans and serve!
