Red, white and blue just got a little bit healthier with this Patriotic Fruit Salad with Sweet Lemony Whip.
Strawberries and blueberries (or really any berry your taste buds desire) are mixed with sugar, lemon and a hint of vanilla and topped with a zesty, sweet lemon whipped cream for a lightened up and totally delicious dessert perfect for the Fourth of July. Better yet – it comes together in less than 20 minutes!
Patriotic Fruit Salad
In a mixing bowl, add the heavy cream and sugar. Using an electric hand mixer, beat cream on medium-high until stiff peaks form (2-3 minutes; careful not to over whip!).
Gently fold in lemon zest. Set aside.
Add the mixed berries to a large bowl along with sugar, lemon juice, vanilla and salt. Gently toss to combine.
To serve, portion fruit into 6 glass serving cups and generously top with whipped cream and garnish with mint leaves and extra berries. Best served immediately.
