Slow Cooker Sweet Potato Shepherd's Pie
Begin by adding the beef to a slow cooker turned to high. Chop all vegetables and add them to the beef.
Add in the beef broth, tomato paste, thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Mix well and let the mixture cook for 3-4 hours.
At the 3-4 hour mark, wash potatoes, and pierce them with a fork. Place them in the microwave wrapped in a damp paper towel. Microwave on high for 6-8 minutes, or until the potatoes are soft.
If desired, peel the potatoes when they're cool, or place them with the skin on into a bowl with ghee or butter, the remaining 1/2 teaspoon of salt, and the remaining 1/4 teaspoon of pepper. Mash with a fork of whip with a handheld mixer.
Spoon the potato mixture over the beef mixture in the crock pot and spread it evenly over the surface. Replace the lid and let this cook for an additional hour before serving.
