Paleo Pumpkin Muffins

These Paleo Pumpkin Muffins are gluten and dairy free and use no refined sugar. They are still moist and full of pumpkin flavor.

Instructions
  1. Combine the coconut sugar, ghee, and almond butter well.
  2. Add the beaten eggs, pumpkin puree, and vanilla and mix well.
  3. In a separate bowl, whisk together the cashew flour, coconut flour, baking powder, baking soda, and salt.
  4. Add to the wet mixture and incorporate everything fully.
  5. Scoop the batter into greased muffin tins and fill 2/3 of the way up.
  6. Bake for about 18-20 minutes until a toothpick comes out clean. Cool on a wire rack.
