Instructions
  1. Preheat the oven to 350 degrees and grease or line a muffin tin.
  2. Combine the almond meal, coconut flour, baking soda, baking powder, cinnamon and sea salt in a bowl and whisk together.
  3. In a separate bowl, beat together the coconut oil, sugar, coconut milk, eggs, and vanilla until well incorporated.
  4. Gradually add the dry mixture to the wet until well incorporated. Fold in the grated carrot and golden raisins.
  5. Pour the batter evenly among about 12 muffin cups and place in the oven for 20-25 minutes or until the muffins are set and golden brown.
