Instructions
  1. Cook the brown rice according to package directions.
  2. Heat the oil in a large skillet or wok over medium-high heat.
  3. Add the diced onion and chicken and saute for about 10 minutes, or until the chicken medium-high.
  4. Add the frozen vegetables and saute until the moisture has evaporated.
  5. Add the rice, soy sauce, and sesame oil and mix. Make a hole in the middle and crack in the eggs. Saute for 5 additional minutes, or until the egg cooks.
  6. Top with green onion and serve.
