Crispy and chewy oatmeal nests filled with thick Greek yogurt and topped with fresh berries for a perfect breakfast or brunch treat.
These oatmeal cups are a breeze to make. Simply combine honey and eggs to bind and sweeten the oats, and bake them in a muffin tin. When they’re finished, fill with Greek yogurt (or a filling of your choice) and top with berries.
Oatmeal Nests with Greek Yogurt Filling
Preheat the oven to 375 degrees.
Combine the oats, honey, beaten eggs, and vanilla.
Divide the oat mixture evenly between a greased muffin tin. Press the mixture into the tins to create a well using your fingers or the bottom of a shot glass.
Bake the cups for 15-20 minutes until cooked through and golden. If the cups start to puff up, remove from the oven and push them down into the muffin cups again with the back of a shot glass.
Remove from the oven and let the cups cool.
Spoon the Greek yogurt into the cups and top with berries when you're ready to serve!
