Sometimes, you just need some good, old fashioned meatloaf to get you through the day. These perfectly proportioned Paleo meatloafs are the perfect things to take along for a busy day. Pair them with a side salad to get your greens in!
Mini Paleo Meatloafs
Begin by sauteeing your pepper and onion with the olive oil over medium heat until the onions are translucent. Add the garlic for one minute and remove from the heat. Pour the veggie mixture into a bowl.
Add in the meat, nut meal, egg, 1 teaspoon of mustard, thyme, basil, salt and pepper and mix well.
Shape into 6, evely sized mini meatloafs. Place on a slightly greased baking sheet in the oven for 15 minutes.
While they bake, mix up the tomato paste, remining 1/2 teaspoon of mustard, and maple syrup. Remove the meatloafs from the oven and spoon the mixture over top of each meatloaf. Place back in the oven for 5-8 minutes.
Serve immediately or store in a container with a lid in the fridge!
