It’s easy to get bored when you’re trying to eat healthy. These Mediterranean Power Bowls can be whipped up in no time and they provide a real fresh flavor punch that will keep you going and coming back for more. Try cooking this with our favorite avocado oil!
Mediterranean Power Bowls
Add the chicken breast, 2 Tablespoons of the olive oil, lemon juice, Italian seasoning, 1 teaspoon of the salt and pepper to a bag or bowl. Let this marinate for 30 minutes.
When you're ready to cook the chicken, preheat the oven to 400 degrees.
Bake the chicken for 22-30 minutes, until cooked through.
While the chicken bakes, make the quinoa according to the package directions. Add the remaining 1/2 teaspoon of salt to the quinoa.
Dice the tomatoes and cucumber.
When the chicken is cooked, let it rest for 5-10 minutes before slicing.
Divide the quinoa, chicken, and vegetables evenly between 4 servings and drizzle with more lemon and olive oil if desired.
