Maple Bacon Sweet Potato Rounds with Candied Pecans

Instructions
  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a skillet, cook the bacon. Remove from skillet and transfer to a paper towel-lined plate to drain the fat and cool. After cooled, crumble the bacon slices and set aside.
  3. While the bacon is cooking, begin slicing your sweet potatoes into thin slices, about ¼ of an inch thick.
  4. Lay the sweet potato rounds lined baking sheets. Using 3 tablespoons of the maple syrup, brush each side of the sweet potato rounds and then season with salt.
  5. Bake for 15 minutes, then turn and bake for another 10-15 minutes or until the edges are brown and begin to crisp. Remove from oven and let cool.
  6. While the sweet potato rounds are cooling, in a small bowl whisk together the brown sugar, 4 tablespoons of the maple syrup, and cinnamon.
  7. In a separate skillet, melt the butter over medium heat. Add the pecans and stir to coat. Add in the brown sugar mixture and stir to combine. Let the pecans cook for about 3-5 minutes, or until the sauce begins to caramelize. Spread onto parchment paper or a silicone mat to cool.
  8. To assemble, place ¼ teaspoon of the blue cheese crumbles onto the center of each sweet potato round. Next, top with crumbled bacon. Then, top with 2-3 candied pecans. Finally, drizzle with additional maple syrup.
