Nothing says warm weather like lemon poppyseed. We thought we’d turn the powerhouse flavor combo into donut form. Wait until you see how full of flavor and moist these are!
Lemon Poppyseed Paleo Donuts
Before beginning this recipe, place a can of coconut milk in the fridge overnight.
Preheat the oven to 350 degrees.
Add the almond meal, coconut flour, baking powder, baking soda, and sea salt into a bowl and whisk to combine.
In a separate bowl, mix together 1/2 cup of the honey, eggs, oil, almond milk, and lemon juice with a standing or hand mixer. Gradually add the dry ingredients, lemon zest, and poppy seeds.
Pour the batter into a plastic bag. Pipe the batter into a greased donut pan.
Place in the oven for 18-25 minutes, or until they're golden brown. Cool on a wire rack.
While the donuts cool, add the cream that has separated from the liquid from the can of coconut milk to a bowl with the remaining honey. Whip with a standing or hand mixer.
When the donuts are cool, dip them in the cream and serve.
