Instructions
  1. Before beginning this recipe, place a can of coconut milk in the fridge overnight.
  2. Preheat the oven to 350 degrees.
  3. Add the almond meal, coconut flour, baking powder, baking soda, and sea salt into a bowl and whisk to combine.
  4. In a separate bowl, mix together 1/2 cup of the honey, eggs, oil, almond milk, and lemon juice with a standing or hand mixer. Gradually add the dry ingredients, lemon zest, and poppy seeds.
  5. Pour the batter into a plastic bag. Pipe the batter into a greased donut pan.
  6. Place in the oven for 18-25 minutes, or until they're golden brown. Cool on a wire rack.
  7. While the donuts cool, add the cream that has separated from the liquid from the can of coconut milk to a bowl with the remaining honey. Whip with a standing or hand mixer.
  8. When the donuts are cool, dip them in the cream and serve.
