Instructions
  1. In a large pot over medium heat, add your oil. Once the oil is hot, add the bacon and cook until crispy. Transfer from the pot onto a paper towel to remove excess grease, and drain any excess grease from your pot.
  2. Return the pot to the stove and add in the mashed potatoes, stock, milk, salt, and pepper, stirring to combine. Use your spoon to mash the potatoes additionally to remove any large chunks so the soup is smooth. All the soup to lightly simmer.
  3. Add the bacon to the soup, stirring to combine. Serve immediately with a garnish of additional bacon pieces and fresh chives.
