This simple vegetable side, Italian Grilled Zucchini, is sure to complement whatever protein you are serving. Enjoy time outside and save yourself time spent indoors by the oven. It’s a win-win!
We love making dinner as easy as possible. So this summer while the grill is fired up, save yourself from being in a hot kitchen and cook your whole meal on the grill!
Italian Grilled Zucchini
Trim the ends off of both zucchini. Slice into quarters. Add to a plastic food storage bag.
Mince the garlic. Add that to the bag along with the avocado oil, vinegar, sea salt, Italian seasoning, and onion powder. Marinate for 1 hour or over night.
After the zucchini has marinated, heat up the grill to medium-high. Once hot, layer the zucchini across the grates. Check after 10-15 minutes. Once you see grill marks, flip over for another 10 minutes.
Optional: serve with fresh lemon wedges.
