- 1/2 cup coconut oil, melted
- 1/2 cup unsweetened cocoa powder
- 1/4 cup maple syrup
- 1/4 cup crushed peppermint (plus more for topping)
- 1/2 tsp. vanilla extract
- pinch of salt

- Line a loaf pan with parchment paper.
- Place all ingredients in a medium sized bowl.
- Whisk until the mixture is smooth and all ingredients are thoroughly mixed together.
- Pour the mixture into the loaf pan.
- Place the pan in the refrigerator for 1 hour to solidify.
- Once solid, cut into 9 pieces and serve!
