Need to stay healthy? Need something fast? These are the muffins for you. No added sugar and full of fiber and healthy fats to keep you full through the morning! These muffins are great for a hearty grab and go snack or breakfast! What is so great about these muffins is you can add or take away any ingredients so you can tailor them to your wants!
Healthy Morning Glory Muffins
Grind oats into a flour in a food processor until just ground.
In a large mixing bowl combine ground oats, cacao, flax seed, baking soda, cinnamon, ginger, salt and mix.
Add in the carrots, shredded coconut, and nuts and mix together.
In a separate bowl mash the bananas. Then add eggs, almond butter, melted coconut oil, vanilla, orange juice, and milk. Mix well.
Add the wet ingredients to the dry and mix well.
Grease a muffin pan with coconut oil and distribute batter.
Cook for 25 minutes, until the middle is not soft.
