When it comes to meals, side dishes are just as important as the main dish for us. Roasted potatoes are a staple in our house, but sometimes they need to be jazzed up some. This potato salad has similar ingredients you would find in a loaded baked potato but in potato salad form. The potatoes are roasted to get them nice and crispy, with the addition of bacon and broccoli for some greens. It makes a big serving so is great for a dinner party, meal prep, or BBQ.
Healthy Loaded Roasted Potato Salad
Preheat oven to 400 degrees Fahrenheit. Toss potatoes with avocado oil, cumin, 1 tsp. paprika, garlic powder, and salt and pepper to evenly coat. Place on 1-2 parchment paper lined baking sheets and roast for 50 minutes, stirring halfway through until crispy.
Cook the bacon while the potatoes cook. In a large sauté pan over medium heat, add bacon and sprinkle with pepper. Cook for 10 minutes, flipping once halfway through until crispy. Place on a paper towel lined plate and let cool.
In the same pan cook the broccoli. Dump out most of the bacon grease (leaving behind just a thin coating) and heat pan over medium heat. Add broccoli and sauté 5-6 minutes until al dente.
Make the sauce by mixing the mayo, lemon juice, nutritional yeast, 1/2 tsp. paprika, and salt and pepper into a small bowl.
Once potatoes are done, let cool for a few minutes and then add to a large bowl. Mix in the broccoli, bacon, green onion, and sauce and stir to combine. Enjoy!
