We are always looking for ways to jazz up our weekday lunches and this Hawaiian Chicken Wrap with Avocado Herb Spread is our current favorite lunchbox special! With just a little prep time, these components can easily be made ahead of time so all you have to do is assemble, pack and enjoy.
Hawaiian Chicken Wrap with Avocado Herb Spread

In a large bowl mix together olive oil, ¼ c. of pineapple juice, soy sauce, 2 cloves of garlic and ¼ tsp. of chili powder, add chicken, cover and marinate for at least 30 minutes.
Preheat oven to 375* and pour chicken and all of the marinade into an oven safe skillet.
Add pineapple chunks to the skillet and bake along with the chicken at 375* for about 20-25 minutes, turning once. Chicken is done once it reaches an internal temperature of 165*, timing will vary based on the thickness of the chicken breast. Remove from the oven and set aside to cool.
Add avocado, fresh parsley, 2 Tbsp pineapple juice, lime juice, 2 cloves garlic, ¼ tsp chili powder and ¼ tsp salt to the bowl of a food processor. Puree until a thick creamy spread forms and ingredients are well blended.
When ready to build your wrap, slice or chop chicken to desired thickness. Lay flat each tortilla and divide avocado sauce amongst each tortilla spreading into a thin layer. Then add ¼ of each of the following to center of each tortilla: spinach leaves, red onion, roasted pineapple and the chicken breast.
To roll, position the tortilla so that the filling of the wrap is centered horizontally along the middle of the tortilla, then pull the bottom half of the tortilla over the ingredients. Fold each side inwards and then continue to roll the tortilla upwards until a tight burrito like shape forms.
*The chicken, pineapple and avocado sauce can be made ahead of time and stored for up to 2 days in airtight containers.
