Grilled Carrots with Curry Greek Yogurt

  1. Preheat a grill to medium heat.
  2. Wash and peel the carrots and brush them with the olive oil. Place them on the grill, and grill for about 15 minutes, turning frequently.
  3. The carrots will be done when they’re evenly charred and slightly soft.
  4. Mix together the Greek yogurt, lemon, water, honey, cilantro, dill, salt and curry powder. Add more water, if desired, until desired consistency is reached.
  5. Serve the sauce over the carrots or on the side.
