Grilled Carrots are a delicious twist on traditionally cooked carrots and paring them with Curry Greek Yogurt sauce makes the whole dish come together.
Grilling carrots creates the most wonderful smokey flavor that you will adore and the curry sauce brightens up the dish for the interest you crave.
Grilled Carrots with Curry Greek Yogurt
Preheat a grill to medium heat.
Wash and peel the carrots and brush them with the olive oil. Place them on the grill, and grill for about 15 minutes, turning frequently.
The carrots will be done when they're evenly charred and slightly soft.
Mix together the Greek yogurt, lemon, water, honey, cilantro, dill, salt and curry powder. Add more water, if desired, until desired consistency is reached.
Serve the sauce over the carrots or on the side.
