Making your own dressing at home can seem daunting, but with this Greek Chicken Salad with Homemade Vinaigrette it doesn’t have to be. This quick salad is loaded with protein, flavor, and healthy fats – you have to try it!
Greek Chicken Salad with Homemade Vinaigrette
For the dressing/marinade
First, make the dressing/marinade. Add the olive oil, vinegar, lemon juice, Italian seasoning and salt into a jar or bowl. Shake or whisk to combine.
Pour about 1/3 of the dressing over the chicken and let it marinate for 30 minutes. In the meantime, preheat the oven to 400 degrees.
When the chicken has marinated, place it in the oven for 25-30 minutes, until cooked though. Allow it to rest while you assemble the salad.
Chop the lettuce, tomato and cucumber. Add them to a bowl with the olives, artichokes, and fetta cheese. Add the chicken and the reamaining dressing and toss to combine before serving.
