Packed full of healthy fats and nutrition, it’s the perfect breakfast to fuel your tricker-treater…and you…for a fun day, full of Halloween festivities!
Eyeball Egg On Toast
Place the avocado in a small bowl and mash to desired consistency. Add salsa and salt and pepper to taste and stir to combine. Set aside.
Preheat a small nonstick skillet over medium – low heat for 3-5 minutes. Add butter to the pan and once melted, gently crack the egg into the skillet and season with salt and pepper. Cover the pan tightly and cook until whites are completely cooked but yolk is still runny or until the yolk is to your liking.
To assemble: Place the slice of toast on a small plate and spread with the avocado mixture. Place the two slices of bacon on top of the avocado mixture. Gently place egg on top of the bacon. To create the veins, place a few teaspoons of siracha or ketchup into a small sandwich bag. Cut off a tiny portion of one of the corners of the bag and use this as a piping bag to draw the veins onto the egg whites. Enjoy!
