Instructions
  1. Dice the veggies and slice the sausage.
  2. Add the oil to the bottom of the Instant Pot pot and turn the instant pot to the "Saute" function for 10 minutes.
  3. Add the vegetables and sausage and let this saute for 10 minutes, with the lid off.
  4. Meanwhile, peel your shrimp if you need to. Add the arrowroot powder to a bowl and add some of the chicken stock. Stir to make a slurry.
  5. Once the saute cycle has finished, add the rice, arrowroot slurry, chicken stock, tomatoes, Worcestershire sauce, Tabasco sauce, spices and seasonings, and shrimp to the Instant Pot.
  6. Close the lid and make sure the knob is turned to "Sealing". Select the "Pressure Cook" or "Manual" setting and set the cycle for 10 minutes.
  7. Allow the cycle to finish, let the Instant Pot start a "Natural Release" for 5 minutes and then carefully perform a "Manual Release" by turning the knob to "ventingPressure Uncover and serve.
