Instructions
  1. Cook the quinoa according to the package directions.
  2. When it is cooked, melt the coconut oil in a large saucepan over medium heat until hot.
  3. Fry the quinoa in the oil for about 8 minutes, until crispy.
  4. Pour the quinoa out onto a paper towel to drain.
  5. Melt the chocolate and coconut oil in a double boiler or in the microwave until smooth.
  6. Mix the melted chocolate mixture, fried quinoa, peanut butter, and powdered sugar together.
  7. Spread evenly in a layer on a sheet pan lined with parchment.
  8. Place the sheet pan in the freezer or fridge until hard and set. Break into chunks and serve!
