Chicken BLT Salad with Warm Maple Bacon Vinaigrette
Add the chicken, 1 teaspoon of mustard, and 1 tablespoon of maple syrup in a plastic bag to marinate for 30 minutes before cooking.
Preheat the oven to 400 degrees and bake the chicken for 25-30 minutes, until cooked through.
While the chicken cooks, fry the bacon, reserving the fat.
Add the fat to a bowl or glass jar with the remaining mstard, remainig maple syrup, apple cider vinegar, salt and pepper. Shake or whisky viggorsy to make the dressing.
