These garlic and thyme healthy mashed potatoes are easy, loaded with flavor, and the perfect creamy side dish to your favorite seasonal dinner.
As the seasons change, we find ourselves stepping away from our summer BBQs in favor of warm, comfort foods. At the center of most comfort meals is the potato.
Best Ever Healthier Mashed Potatoes
Place a large pot of water on medium-high heat (enough water that all potatoes will be covered when you add them to the pot). Once boiling, add in your potatoes and cook until fork tender for about 8 – 10 minutes.
nce your potatoes are cooked, drain the water and return the potatoes to your pot over medium heat. Use a masher to mash your potatoes until they’re a smooth consistency (it’s okay if there are some lumps since we didn’t remove the potato skins).
Add in your coconut milk, mixing to combine. Add in the minced garlic, fresh thyme, and salt and pepper to taste, mixing until it’s fully incorporated. Keep over low heat until you’re ready to serve.
