Bacon and Green Beans

Green beans are a staple for holiday meals. Whether you are giving them a quick sauté, making grandma’s green bean casserole, or adding them to a salad, they make an appearance in one way or another.  Crispy bacon plus fresh green beans with the addition of mushrooms and onions make this dish these a perfect and easy holiday dish. It’s made with only a handful of ingredients and comes together in about 30 minutes.

Instructions
  1. Cook the bacon. Heat a large pan over medium heat and add bacon. Cook for 4-5 minutes, flip, and cook for another 4-5 minutes until crispy. Once it is done, put on a paper towel lined plate to let cool.
  2. Leaving the bacon grease in the pan, fry the onion slices. Add individual slices to the pan, making sure not the overcrowd, and fry for 2-3 minutes, flipping halfway through. You may have to do them in two batches. If needed, turn down the heat some to make sure they down burn. You want them crispy and golden brown. Remove from pan and let cool.
  3. Add green beans, garlic, and salt and pepper. Sauté for 4-5 minutes until slightly softened. Turn down the heat to medium-low and add mushrooms, coconut milk, and a little more salt and pepper and sauté for another 3-4 minutes. Add to a large bowl or plate and top with crumbled bacon and fried onions.
