Asparagus Stuffed Chicken Breast
Preheat the oven to 375 degrees.
Butterfly the chicken breasts and lay them on a baking sheet lined with foil or parchment.
Add the cashews, chicken stock, garlic and 1/2 teaspoon of salt to a blender and liquify until creamy.
Chop the asparagus so that they're the same length as the chicken breast.
Spread the cashew garlic mixture on the chicken breast, place the asparagus on top, and close the chicken up by closing the butterfly.
Place in the over for 30-40 minutes, or until the chicken is fully cooked and juices are no longer pink.
