Apple Cinnamon Oatmeal Muffins

Instructions
  1. Preheat oven to 350 degrees F and lightly coat a 12-count muffin pan with non-stick cooking spray. If using muffin liners, grease the liners.
  2. In a large bowl whisk together the old-fashioned oats, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a high powered blender add the applesauce, banana, maple syrup, eggs, plain greek yogurt, vanilla extract, and almond milk.
  4. Add the dry ingredients to the blender and blend until combined. Stir in the chopped apple.
  5. Divide evenly among muffin liners and top with oats.
  6. Bake for 15-18 minutes or until cooked through.
  7. Allow to cool a few minutes in the pan before transfering to a wire cooling rack.
