Is there anything better than crisp Fall air and all the seasonal flavors?  While the official start of the season may be a few weeks away, we believe in celebrating flavors like apple and cinnamon all year long.

With all the kids back to school this time of year we’re also looking for meal prep recipes to save time during the busy work week.  Breakfast is typically the most rushed meal in every household. So make a single or double batch of these Oatmeal Muffins for the week, and just reheat each morning for a healthy and delicious breakfast.  Oh, did we mention the muffins are also kid approved?

To make these apple Cinnamon Oatmeal Muffins we simply add all the ingredients into a blender, blend, stir in the apples, and bake in a muffin tin.  We made them healthier by using oats to replace regular flour. Oats are higher in fiber and other nutrients to help keep us fuller longer. The muffins are also naturally sweetened with a ripe banana and maple syrup.  And lastly, we used applesauce and greek yogurt in place of regular butter for healthier fats.

This Shawarma Chickpea Salad is perfect to make ahead – simply prep all the components separately, and then add to bowl and toss with dressing before an event! This salad also tastes better the longer it sits, so it’s great for a cool and refreshing meal prep option.

Healthier Apple Crisp

If there is one fruit that always has a place in our kitchens, it’s the humble apple. There’s no bill it doesn’t meet- a pleasure in sweet preparations, a pleasant surprise in savory, even a healthy (portable!) snack- it’s no wonder it’s become a mainstay of both the culinary world and the home kitchen. Especially in the fall, though, this true superfood is at its best, and needs little to shine and satisfy in any recipe. This apple crisp is an example of just that. The crisp, crumbly topping acts as a mere supporting player, hiding a soft, luscious Apple filling that is both comforting and light. It’s the ideal, light dessert for any occasion.

To make this crisp even more enjoyable, we’ve prepared it in individual ramekins, so that everyone can have their own! It also keeps the portion size in check, letting the apples take center stage as the healthy, hearty hero of the day!
