Matcha Donuts with Strawberry Icing

These matcha donuts are gluten free donuts made using a banana based batter. They are delicious alone, but pair perfectly with homemade strawberry icing.

Ingredients: Donuts 2 medium ripe bananas 1/2 cup coconut flour 1/4 cup hemp hearts 1 T MCT oil or melted coconut oil 3 t matcha powder 2 whole eggs Icing 1/4 cup strawberries 1/2-1 cup powdered sugar 1 t coconut oil
Preparation: Preheat oven to 350F. In a bowl mash 2 ripe bananas. In a separate bowl whisk two whole eggs (large or medium). Combine eggs with the bananas, then add the remaining ingredients, coconut flour, hemp hearts, MCT oil and matcha powder. Once combined in a greased donut pan, add your donut dough 1/2-3/4 of the way up. Bake for 15 minutes or until the bottoms are slightly browned. Remove and let cool then pop out of the donut tray. For icing, chop 1/4 cup fresh strawberries, then place in blender to puree. Add your pureed strawberries to a bowl. Melt coconut oil then add to strawberries. Add powdered sugar until you get an icing consistency, then drizzle onto donuts.
