Party Sized Chicken Collard Wraps with Peanut Sauce

Finding new and fun ways to eat more veggies is always a priority around our house. As much as we love roasted broccoli and sautéed green beans, they can sometimes become tiring. These wraps swap out your typical tortilla and use collard greens instead making a great low carb and nutrient packed substitute. They are served almost like sushi and make a great appetizer or party finger food.

Party Sized Chicken Collard Wraps with Peanut Sauce

Mini Collard Wraps
  1. To make the sauce - mix all the ingredients together in a small bowl and set aside.
  2. Lay one collard green leaf down on a flat surface lengthwise. It should look like a big tortilla. On the side closest to you, add a little of each ingredient in the order listed, laying on top of each other like you would build a wrap/burrito. Once everything is added, start to roll the collard green leaf like you would a burrito - fold in the outside ends and roll going away from yourself. Be careful to make sure nothing comes out.
  3. Pin with a few toothpicks to hold in place and cut in half. Repeat with remaining ingredients. Serve with peanut dipping sauce. Enjoy!
